Комплексная переработка остаточных пивных дрожжей в ценные продукты
Аннотация
В рамках данной работы составлен аналитический обзор литературы по получению и применению различных продуктов из отработанных пивоваренных дрожжей. Предложена технология комплексной переработки отработанных пивоваренных дрожжей завод ООО «Объединенные Пивоварни Хейнекен» г. Екатеринбург. Проведено исследование методов получения и свойств дрожжевого экстракта, эргостерола и β-глюкана. Полученные с помощью различных методов дрожжевые экстракты протестированы как компоненты питательной среды. Приведено описание технологии производства дрожжевого экстракта, блок-схема производства, рассчитан материальный баланс на 1 кг готового продукта, произведен расчет основного оборудования и выбор вспомогательного оборудования, составлена аппаратурная схема производства.
An analytical review of the literature on the preparation and use of various products from spent brewer's yeast was compiled. A technology for the complex processing of spent brewing yeast from the Heineken United Brewery LLC, Yekaterinburg, has been proposed. The methods of obtaining and properties of yeast extract, ergosterol and β-glucan were studied. Yeast extracts obtained by various methods were tested as components of the nutrient medium. A description of the technology for the production of yeast extract, a block scheme of production are given, the material balance for 1 kg of the finished product is calculated, the calculation of the equipment , an instrumental scheme of production is presented.
