Разработка суточного меню профилактического питания шахтеров
Аннотация
В рамках данной работы составлен аналитический обзор литературы по питанию и классификации заболеваний у работников золотодобывающий компаний. Проведены анализ и расчеты реального рациона горнорабочих, а также составлен сбалансированный рацион. Проведен синтез функционального кисломолочного продукта, обогащенного пребиотической добавкой. Изучены органолептические, физико-химические и микробиологические свойства образцов йогуртов. Полученные образцы йогуртов могут применяться в питании шахтеров для восполнения нормы витамина D и пищевых волокон.
This work consists of an analytical review of the literature on nutrition and classification of diseases of employees of a gold mining companies has been compiled. Also, the analysis and calculations of the real diet for miners have been carried out, and a balanced diet has been com-piled. The synthesis of a functional fermented milk product enriched with a prebiotic additive was performed. Organoleptic, physico-chemical, and microbiological properties have been stud-ied. The obtained yogurt samples might be used in the nutrition of miners to replenish the norm of vitamin D and dietary fiber.
